📝 Ingredients (2–3 servings)
• Button mushrooms – 200–250 g (sliced)
• Butter – 2 tbsp
• Olive oil – 1 tbsp (optional, butter burn na ho)
• Garlic – 1 tsp (finely chopped)
• Onion – 1 small (finely chopped)
• Maida (all-purpose flour) – 1½ tbsp
• Milk – 1 cup (warm)
• Fresh cream – ½ cup
• Vegetable / chicken stock – 1½ cups
• Black pepper powder – ½ tsp
• Salt – to taste
• Nutmeg powder – 1 pinch (optional, hotel secret)
• Oregano / thyme – ½ tsp (optional)
For Garnish (optional):
• Sautéed mushroom slices
• Fresh cream swirl
• Parsley / spring onion greens
👨🍳 Method
1. Sauté base
Pan me butter + olive oil garam karein. Onion daal kar transparent hone tak bhunein.
Garlic add karke light sauté karein (brown na ho).
2. Cook mushrooms
Sliced mushrooms daalein, medium flame par pakayein jab tak pani chhod kar dry na ho jayein.
Thoda salt add karein taaki mushrooms jaldi cook ho
3.Make roux (thick base)
Maida add karein, low flame par 1–2 min bhunein (raw smell khatam ho).
4. Add liquids
Slowly warm milk daalte hue continuously stir karein (lumps na bane).
Ab stock add karein, achhi tarah mix karein.
5.Blend (optional but hotel style)
Soup ko thoda thanda karke blender me smooth ya half-chunky blend karein.
6.Final cooking
Pan me wapas daal kar fresh cream add karein.
Black pepper, nutmeg, herbs aur salt adjust karein.
2–3 min simmer karein (boil na karein).
🔥 Consistency Check
• Zyada thick → thoda stock/milk add
• Zyada thin → 1 tsp butter + 1 tsp maida paste add karke cook
